Weeknight Chilli

This is a quick but super delicious texmex style chilli that doesn’t take long to make.

  • 3-4 slices of bacon, chopped
  • 1 medium sweet onion, chopped
  • 3 cloves of garlic, diced
  • 1 lb ground beef (80/20 is best)
  • 1 can of tomato sauce or crushed tomatos (personal preference i like tomato sauce but some prefer chunky tomatoes)
  • 1 can of black beans (whole can not drained)
  • 3 dashes of worsteshire sauce
  • 1 tbsp chili powder
  • 1 tbsp oregano
  • 1 tbsp cumin
  • salt and pepper to taste
  1. chopped up bacon and cook until about crispy
  2. throw in diced onion and cook until about soft
  3. add in garlic and cook until aromatic, another minute or two tops
  4. add ground beef and flatten and let sit to brown, then keep stirring occasionally until completely cooked
  5. drain excess fat
  6. add black beans, tomatos and all spices
  7. let everything simmer for at least 30 minutes, its best if you can make it the day before and reheat it

serve with shredded cheese, sour cream and oyster crackers

for spicier chilli add some cayenne or hot peppers with the rest of the spices. i like to throw in a single whole carolina reaper pepper.
